Description

This machine (Baader 605 Meat and Bone Separator) belongs to the advanced generation of meat and bone separators, which are characterized by increased reliability and more stable double support of the perforated drum and pressure rollers. The raw material being processed is pulled between a highly elastic pressure belt and a stainless steel mesh drum rotating with it and is subjected to a short pressing and separating action that occurs in increments. Hard, large or sticky parts remain on the outside of the drum, and all softened parts are forced into the drum through the holes. Improved conditions for the passage of raw materials and improved material qualities of perforated drums, scrapers and operational conveyor provide high reliability of operation, better product quality and more complete utilization of cape fish, as well as an increase in the service life of wear parts. The hinged front plate facilitates cleaning of the machine and, above all, maintenance and tool change. The electro-hydraulic setting of the pressing pressure and the adjustable working speed on any raw material provide the Baader 605 with a high quality output and high productivity. For operation at maximum productivity, a continuous supply of raw materials is desirable through a lifting-tilting device and a batcher (in this configuration, the installation is called Baader 905) or through an inclined belt conveyor with transverse valves, or through a screw conveyor. Productivity depends on the raw materials used, the clamping pressure that determines the output of the product, and the size of the holes of the drum (which are available with a hole diameter of 1.3/2.0/3.0/5.0/8.0/10.0 mm). When changing the size of the holes and when working with different clamping pressure, the parameters change accordingly.

Meat that has been gently separated by Baader machines has high values of pure meat protein in total protein, high BEFFE values (pure muscle protein content without connective tissue protein), and is close to premium meat in quality. The final product after finishing is dry granular minced meat with a degree of grinding corresponding to the diameter of the drum holes, which can be used to make high-quality boiled and smoked sausages. In the poultry processing industry, Baader separators are used to obtain residual meat from carcasses or individual parts of poultry. Poultry deboning can be carried out without preliminary grinding by high-capacity machines equipped with a “pusher” and a perforated drum with a hole diameter of 2 mm. Poultry meat after additional deboning does not look like an emulsion, but minced meat with a fibrous structure with a low content of bone inclusions and is used for the production of high-grade sausages and chopped semi-finished products.
